Boiled rice

Boiled rice is a quick and simple side dish for many different meals. Some people have difficulty with it (I certainly did), but it is easy to prepare, if you follow a few basic rules.

You can choose any long grain rice, but check the packet for cooking times because this varies. Basmati or jasmine rice has more flavour than standard rice, but it can cost a lot more. Personally I think it is worth it because rice is a relatively cheap ingredient anyway.

200g long grain rice

Method

  1. Place the rice in a large saucepan. The more space you give the rice, the better. Rinse the rice in cold water, then drain the water off.

  2. Add plenty of boiling water to the rice. Again, this gives it room to cook. Put it on the hob and bring it back to a rolling boil.

  3. It is important to cook the rice for the correct amount of time. You don't want undercooked rice, but a couple of minutes of overcooking will ruin it too. Use the packet instructions as a guide, but towards the end of cooking taste it every minute and stop cooking as soon as it is tender.

  4. When the rice is cooked, drain it in a colander. Rinse with plenty of boiling water. Return to the pan, cover, and leave to rest for a couple of minutes.

Cooking rice is easy, it just takes a bit of care. Rinse it in cold water first, cook it for the right length of time, then rinse it in boiling water, and it will work.
