Cabbage in sage butter
Cabbage is not everyones favorite vegetable, but it is very nutritious.
Overcooked cabbage can develop a flavour and texture which many people do not like. The secret is to shred the cabbage finely, then cook it for a very short time. The cabbage then has a subtle, sweet taste. Combined with a herb and garlic butter, this makes a delicious side vegetable.
Ingredients
1 cabbage
25g butter
2 cloves garlic
6 fresh sage leaves (or a good pinch of dried sage)
Salt and pepper to taste
Method
Crush the garlic and chop the sage leaves (if using fresh).
Melt the butter in a small pan and gently cook the garlic, sage, salt and pepper for a few minutes.
Finely shred the cabbage. Place in pan, cover with boiling water and simmer for just 2 minutes.
Drain and serve the cabbage, pouring a little of the sage butter over each portion.
Serve immediately.
Any herb could be used, but the savory flavor fo sage seems particularly good.
